Kappa: Kerala's tapioca mash and the curries it comes with

Kappa is one of those dishes that Kerala people talk about with a particular warmth. It is simple, filling and a little nostalgic, and when it arrives with a hot, spicy curry, it makes sense immediately.
What is kappa?
Kappa is the Malayalam word for tapioca, also known as cassava. The root is peeled, cut and boiled until soft, then mashed. It is often tossed with crushed shallots, green chilli, turmeric, mustard seeds and curry leaves, sometimes with grated coconut. The result is soft, a little sticky, gently savoury and very comforting.
Kappa has a long place in Kerala's food story. Cassava is a hardy crop, filling and inexpensive, and for many families it was a staple on hard days. Today it is a favourite, eaten out of choice and nostalgia. You find it in homes, in tea shops and in the toddy shops (kallu shaap), the casual local eateries where it is served with strong, spicy curries.
What kappa is eaten with
The mash is mild by design, so it is paired with something bold:
- Beef curry: a deep, peppery gravy with coconut slices. The pairing most people think of first.
- Chicken curry: lighter and fragrant, often with coconut milk and curry leaves.
- Fish curry: Kerala's famous red fish curry, such as the Kottayam style.
- Kadala curry: black chickpeas in a dark gravy, a vegan option.
The way to eat it: take a small portion of kappa, press it into the curry, and eat with your fingers.
Kappa and kappa biryani
Kappa also turns up in unexpected places. Kappa biryani layers the mashed tapioca with spiced meat, a Kerala dish with its own loyal fans. We wrote about the main dishes in what is Kerala food? and what to order on your first visit.
What to order at kokoland
Our menu rotates, so see today's menu. Dishes with kappa appear regularly: kappa with beef curry, with chicken curry, with kadala curry or with Kottayam fish curry. Kappa is also sometimes available as a side dish to add to any curry. Everything is cooked fresh, so if you pre-order for pickup, allow about 25 to 30 minutes.
Frequently asked questions
Is kappa vegan? Tapioca, spices, coconut and oil can be fully plant-based, but recipes vary. Ask us on the day and we will tell you honestly.
Is kappa gluten-free? Cassava is naturally free of gluten. We also cook with wheat in our kitchen, so we cannot promise there are no traces.
Is kappa the same as potato? No. Tapioca is a root with a different, stickier texture and a more neutral taste. It is closer to a soft mash than to potato.
Is kappa spicy? The mash is mild with a little green chilli. The curry brings the heat. Tell us how hot you like it.
